Biar, in the Alto Vinalopó about 99 km from Valencia, is a town of 3,677 residents among olive groves: among the biggest oil producers of the province. The 12th-century Almohad castle, a national monument since 1931, keeps ribbed vaults among the oldest of their style.

In the old town, the Asunción church pairs late-Gothic fabric with the 1519 Plateresque portal, and the ethnography museum fills the Capuchin convent with eleven rooms. A kilometre out, the Gracia sanctuary adds its 1770 Rococo chapel.

Biar prides itself on oil: it ranks among the biggest producers of the province. The old town keeps medieval street lines under the castle, with quiet squares and views to the Fontanella range, and the Gracia sanctuary stretches the walk a kilometre out to the eastern olive groves. The ethnography museum and the church are visited one after the other in the same historic centre, steps apart from each other.
