Ricard Camarena has two Michelin stars and a green star for sustainability. His restaurant is inside the former Bombas Gens factory, which is now also an art centre. For many, it's the best restaurant in the Comunitat Valenciana.
Camarena's cooking centres on vegetables from his own vegetable garden, less than 8 km from the restaurant. His broths and juices are so intense that they often surprise diners expecting "only" a vegetable menu. Almost nothing is wasted: even leftover leaves end up in a broth or a drink.
There's only a tasting menu, and only with prior reservation. Book weeks in advance and combine it with a visit to the Bombas Gens art foundation, in the same building.
